Brunch Burritos

1 Large Green Pepper, chopped
2/3 Cup Chopped Onion
2 Tablespoons Butter or Margarine
8 Eggs (slightly beaten)
1 Cup (4 ounces) Shredded Monterey Jack
or Cheddar Cheese
1-1/2 Cups Picante Sauce
8 (8-inch) Flour Tortillas
Sour Cream (optional)


Cook green pepper and onion in butter in  10-inch skillet until tender. Combine eggs and
cheese; add to skillet. Cook over medium heat, stirring frequently, until eggs are set and
cheese is melted. Heat picante sauce in small skillet until warm. Dip each tortilla into
picante sauce. Spoon about 1/2 cup egg mixture onto center of each tortilla. Fold 2 sides over
egg mixture; fold ends under and place in 13 x 9 x 2-inch baking dish. Top with remaining
picante suace. Bake at 350 degrees until hot, about 10 minutes. Top with sour cream, if desired.

Makes 6 to 8 servings
