Beef jerky was
invented centuries ago, we
think by the Cowboys and
Indians in the USA.
Originally made by cutting available meat
into thin slices
and hanging in the sun to dry.
We've come a long way since then.
The idea
is still supreme, but the dehydration and curing
methods
are far safer and superior. Some of the
chemicals used in Jerky
preparation have been
talked down, but used in moderation are as
safe
as anything you can eat and improves the flavor
and longitivity
of the cured/dehydrated meat.
If you've been turned off by Beef Jerky in
the
past few years, well so have we. We had great
beef jerky a few
years ago and our processing plant
closed due to family retirement, but
we're back
and the "New Recipe" is better than ever.
This is not
your old "feels and tastes" like shoe
leather. No real jerky is
"tender" but the cross
grain cut, seasoning and slow dehydration
process
makes this chewy, but very chewable.
