
Mexican Lasagna
| 1 lbs ground beef 1/2 cup chopped green pepper 1/2 cup chopped onion 1 8oz can tomato sauce 1 6oz can tomato paste 1 1-1/2 oz pkg taco seasoning mix 1 tsp chili powder |
1/4 cup water 1 cup sour cream 2 eggs (beaten) 1 tsp pepper 6 8inch flour tortillas 3/4 cup shredded cheddar 3/4 cup shredded monterrey jack |
Pre-heat oven to 350 degrees, grease a 9 x
13 baking dish, In a saute pan brown
ground beef, green pepper and onions and drain. Mix tomato sauce, paste, taco
seasoning, chili powder and 1/4 cup water. Add to ground beef and stir. In
another bowl combine sour cream, eggs and pepper. Layer beef mix and tortillas
1/3 at a time in baking dish starting with beef and ending with beef. Top with
(sour cream mix*). Spread evenly, sprinkle both cheese's over top and bake
for 30 minutes.
(*top sour cream mix with 1 Tbsp fresh cilantro or 1/2 Tbsp dry)
