Hi From Electra, another great Independence Day holiday
passed and Mimi and I have been on vacation again all week.
It's sure been enjoyable except for the torrential rains that
have been hammering on us for the past couple of weeks.
There were some clear times though that allowed us to get
a lot of stuff done. That's what we use vacations for as a
general rule. Catching up and getting rest at our whim.

It's been good and thanks for letting me have the time off
without too much fuss. Hope you enjoy this weeks recipes
and humor.

While awaiting the arrival of our "puddle jumper" airplane
for the return flight across Jamaica to the major airport,
I sat wringing my hands and trying to quiet the butterflies
in my stomach in anticipation of the tiny airplane and a
very bumpy flight.

Suddenly, an old fire truck began speeding down the runway,
toward the arriving airplane, with sirens blaring. Frantic now, I
implored the ticket agent to tell me what was happening.
She calmly answered, "Oh they just do that to clear the
chickens off the landing strip."

1 lemon makes about 1 teaspoon of grated peel

Bob took his 4 year old Josh, out to McDonald's for
dinner one evening for a "guy night".
As they were eating hamburgers, Josh asked
"Daddy, what are these little things on the
hamburger buns?"
He responded that they were tiny seeds and
were ok to eat.
Josh was quiet for a couple of minutes
and obviously in deep thought.
Finally, Josh looked up and said,
"Dad, if we go home and plant these seeds in our
backyard, we will have enough hamburgers to
last forever."

Mama's Place

It's okra season in many parts of the country.

Try this tasty dish from my Mama's
files. I just found it and remembered how much we all
loved the okra and associated side dishes from it.

Creole Okra

3/4 cup sliced okra
2 Tbsp minced onion
2 Tbsp minced green pepper
1 Tbsp butter or margarine
3/4 cup chopped tomato
1 tsp sugar
1/4 tsp salt
1/8 tsp pepper

Saute Okra, onion, green pepper in butter about 5 minutes.
Stir constantly, stir in remaining ingredients.

Cook over low heat 10-15 minutes stirring occasionally.

If something spills or boils over in a hot oven, sprinkle with
salt immediately. When oven cools brush off burned food and
wipe with a damp sponge.

Savoury Cheese & Onion Pie

10" Pie Shell (un-baked) deep dish
4 tbsp. Butter
10 oz. Swiss Cheese
2 lg Tomatoes Ripe
4 tbsp. Flour
2 lg Eggs
2 lg Onions (sliced)
3/4 cup Cream
1 Cup Cream Cheese
1/4 - 1/3 tsp Salt
1 tbsp Basil or lots more fresh chopped

Grate the cheese and toss with the flour. Melt the butter and saute
the onions until golden. Spread 1/3 of the cheese over the bottom
of the pie dish and cover with onions. In the butter left in the pan,
heat tomato slices with the chopped basil for a minute or two.

Arrange the tomato slices over the onions then cover everything
with the remaining cheese. Beat eggs with the cream and pour over
everything. Bake at 350 degrees. for 35-40 minutes until it tests done.

Eddie's Ramblin's

Here's some real good beans that are made at our house
from time to time. Made with canned beans which makes
it a pretty easy to contend with recipe and can be cooked
ahead and rewarmed or just cook it on the spot.

Ranchero beans

1 lb ground beef
2 cup chopped onion
1 cup catsup
2 Tbsp prepared mustard
1 Tbsp salt
1/4 cup brown sugar
1 Tbsp liquid smoke (if available)
2 - 1 lb cans of pork and beans
1 - 1lb can kidney beans (drained)
1/4 cup chopped green pepper (optional)

Brown ground beef and onion together and drain off fat.
Add remaining ingredients and mix together. Pour into a
covered casserole or baking dish. Bake for 1 hour at 350F.

This is also great to take to a covered dish event or family
outing or for a quick meal at home.

I recently saw a distraught young lady weeping beside
her car. "Do you need some help?" I asked. She
replied, "I knew I should have replaced the battery to
this remote door un-locker. Now I can't get into my
car. Do you think they (pointing to a distant
convenient store) would have a battery to fit this?"

"Hmmm, I Dunno. Do you have an alarm too?" I asked.
"No, just this remote thingy," she answered, handing
it and the car keys to me. As I took the key and
manually unlocked the door, I replied, "Why don't you
drive over there and check about the batteries...it's
a long walk."
