lasagna noodles, boiled and drained
1 pound ground beef
1 can or jar of your favorite spaghetti sauce
1 16 oz container of cottage cheese (we like the small curd)
1 egg
a lot of shredded cheese (we like sharp cheddar, more flavor)
2 cans of diced tomatoes (16 oz each)
1 can sliced mushrooms (4 oz)
dried herbs and spices(basil, parsley, salt, pepper,
garlic powder, onion powder,oregano, etc.)

Heat oven to 350*. Boil lasagna noodles according to package
directions. Brown ground beef, drain and rinse. Add spaghetti
sauce, mushrooms, tomatoes, and spices. Let simmer while
noodles are boiling. Start with layer of noodles along bottom
of large baking casserole dish.

Add some of sauce mixture in a thin layer on top of noodles.
Beat egg and add to cottage cheese. Add half of cottage cheese
on top of sauce layer. Add another layer of noodles. Put some
more sauce mixture on top of noodles. Put half of shredded
cheese on top of sauce. Another layer of noodles.

Put more sauce on top of noodles. Add rest of cottage cheese
on top of this layer of sauce. Another layer of noodles. Put
rest of sauce on top of these noodles. Add the rest of shredded
cheese on top of the sauce. Pour a small amount of water all
along the edges of the finished layers. Cover and bake for an
hour and 15 minutes. Remove cover and bake for additional 15
minutes. Remove from oven and let sit for 15 minutes.

This obviously takes a while, so, start early ,even before you
are hungry. The time drags by slowly when you are waiting.
It is delicious.
